Biography
Anthony grew up in the beautiful Hudson Valley, roughly an hour north of New York City. After discovering the potential of diet to improve health, Anthony left his full-time pharmacy technician job to return to school to study nutrition. Anthony attended City University of New York (CUNY), Lehman College to obtain a Bachelors in Dietetics, Food, and Nutrition. Hungry for more (pun intended), he continued his education and obtained a Master’s degree in Human Nutrition from Columbia University Irving Medical Center. Anthony then took a two-year break from school and worked as a musician, teaching assistant, tutor, and associate researcher at Mount Sinai St. Luke’s Hospital. In addition, Anthony became an accredited Nutrition and Dietetic Technician, Registered in 2016. In 2020, Anthony completed his doctoral training in evolutionary biology in the School of Life Sciences at Arizona State University under the guidance of Karen L. Sweazea, PhD. Anthony firmly believes that an evolutionary perspective can help advance the fields of nutrition, dietetics, and public health. In addition, Anthony completed an Individualized Supervised Practice Pathway (ISPP) through the University of Oklahoma and became a Registered Dietitian Nutritionist (RDN) in summer 2023.
Currently, Assistant Professor at State University of New York (SUNY) Oneonta in the Foods & Nutrition Program in the Department of Human Ecology. Additionally, Anthony is a Research Associate with the Phoenix Veterans Affairs (VA) Health Care System. and an adjunct Faculty at Estrella Mountain Community College where he teaches General Biology online.
As an educator and mentor, Anthony is committed to promoting diversity and inclusion within STEM and nutrition science. Thus, he has taken numerous courses (Diversity in Higher Education and Readings in Inclusive Teaching) and trainings (AccessZone, SafeZONE, DREAMzone, Devils for Devils, Sun Devil Support Network) to work toward this goal. In 2021, Anthony was also awarded the Inclusive Teaching Fellowship from the School of Life Sciences at ASU. In addition, in 2022, Anthony was awarded the JEDI (Justice, Equity, Diversity, and Inclusion) Award from the Graduate & Professional Student Association at Arizona State University.
Anthony's favorite foods: dark chocolate, dried dates, and all things plantains.
